I have been craving shrimp scampi with pasta for awhile now, so I made it tonight. I like my pastas to be hearty so I added easy vegetables. Edamame, sweet peppers and zucchini gave this pasta great flavors. All of these can be easily substituted with whatever you like. This is a great quick weeknight meal, it only took 30 minutes including preparation. I made the scampi sauce myself, because it does not take that long. To make it even easier you can use the scampi sauce made by McCorminck, I like that flavor but it can a little too oily. Take a look at the recipe below.
Shrimp Scampi with Pasta
Ingredients
- 1 lb White shrimp
- 4 oz Pasta of choice, I used spaghetti
- 4 cloves Garlic
- ½ cup Butter I like it to be extra buttery so I used a little over a half
- ½ Zucchini
- ¼ cup Edamame out of shell
- ¼ cup Sweet peppers
- ½ tsp Red pepper flakes
- ¼ tsp Parsley for topping
- ¼ tsp Grated Parmesan cheese for topping
- ¼ tsp Lemon pepper seasoning Used on shrimp, can substitute for what you like
Instructions
- Cook pasta according to instructions
- Season shrimp with lemon pepper seasoning
- Mince garlic and dice up vegetable
- Saute edamame, peppers and zucchini until softened
- In a separate large skillet melt butter
- Add garlic to skillet and cook for 2 minutes
- Add in red pepper flakes
- Add shrimp to butter-garlic sauce and saute for 2-3 minutes
- Once shrimp is done, turn heat to low and toss in pasta and sauteed vegetables
- Top with parsley and grated Parmesan and serve immediately
For a reference, my daughter loves shrimp scampi, my toddler son not so much. If you are not a fan of shrimp, this can be made with chicken or just vegetables as well.
