I have about three dinner go-to’s that I know my kids will definitely eat, which I rotate every other week. Ground turkey stuffed peppers is surprisingly one of them. It has an Italian taste like spaghetti so I think that is why they actually eat it. Also the vegetables are hidden in the meat sauce which is a good way to sneak in veggies if you have picky eaters. If you like a hearty one dish entree this is a recipe that you should try. There is prep work involved but it is worth it to make for a good meal. Great for weekends or when you have time during the week.

The key to making stuffed peppers really good are the spices and filling you decide to use. I got a package of tricolor bell peppers and also used green bell peppers. You can substitute ground beef, chicken or all veggies for the ground turkey. Along with the meat, you need cooked wild rice, diced sweet peppers, onions and garlic, can of diced tomatoes and seasonings. For the seasonings I used salt, black pepper, cumin, basil, oregano, turmeric (good for the immune system) and Rufus Teague meat rub. Olive oil for cooking. Optionally you can add shredded cheese of your choice in the last few minutes of baking. I topped half with Mexican cheese and the other half with Mozzarella.

Preparation

I am not going to lie, there is a bit of prep work that goes into making stuffed peppers. But that just means you are putting more love into the dish. Before you really get going you should make the wild rice and wash and boil the peppers. While those are cooking preheat the oven to 350 degrees and you can begin mincing the garlic and dicing the bell and sweet peppers and onions. Once all of that is done you can really get cooking. Everything will get cooked in one pot, I used my cast iron skillet. Add in about a tablespoon and then brown the garlic and onions for about 2 minutes and add the other veggies. Cook your meat with all the seasonings until done. Then add in diced tomatoes and cooked rice. Put the halved peppers on a baking dish and begin stuffing them. Put them in the oven for 20-25 minutes, add cheese and bake until cheese is bubbly.

Ingredients
  

  • 2 tbsp olive oil
  • 1 can Italian style diced tomatoes
  • 2 cups Cooked wild rice
  • 1 lb Ground turkey can substitute for other ground meat or plant based
  • 4 Bell peppers Different colors
  • 1 tbsp Diced green bell pepper
  • tbsp Diced sweet peppers
  • 2 tbsp Diced yellow onion
  • 3 cloves Minced garlic
  • 1 tsp Basil
  • 1 tsp Oregano
  • ¼ tsp Cumin
  • ¼ tsp Turmeric
  • 1 tsp Salt or to your liking
  • ¾ tsp Black pepper or to your liking
  • 1 tsp Rufus Teague meat rub seasoning Or a meat seasoning that you prefer
  • 2 tbsp Shredded cheese Optional and use what you like

Instructions
 

  • Cook wild rice and dice or mince vegetables
  • Preheat oven to 350°
  • Wash bell peppers and half them, place in boiling water for 5 minutes
  • Once bell peppers are done place open side down on paper towel to dry
  • Warm up pan on medium heat
  • Pour olive oil into pan for making the filling
  • Stir in minced garlic until browned
  • Add in onions and let cook for 2 min
  • Add in diced bell pepper and diced sweet peppers and cook for 2 minutes
  • Add in ground turkey and seasonings and brown completely
  • Pour in and mix diced tomatoes with meat and vegetables
  • Turn the heat down and simmer for 2-3 minutes
  • Spray baking pan and place dried bell peppers on pan
  • Add in rice to the tomatoes and meat
  • Stir together and taste for seasonings
  • Put the filing into the peppers all the way to the top
  • Place in oven for 20-25 minutes
  • Take out of the oven and place shredded cheese on top and bake until cheese is bubbly
  • Let cool for 5 minutes and enjoy
