It’s that time of year to be warm and cozy. A go-to recipe for me that I know my whole family will eat is chili, they love anything tomato based. On this blog you will find a turkey chili recipe, but this one is vegetarian/vegan. My family is not vegetarian but I introduced plant-based meat to some of their favorite dishes like, spaghetti, lasagna, and cheese steaks and they approve. If seasoned and cooked correct they do not even notice it. This easy vegan chili recipe made with Beyond Meat Beyond Beef ground meat is a one pot dish. It takes about 15 minutes to make on the stove and then let it simmer and boom delicious. A bonus is the total of all the ingredients including the Beyond Meat is under $20. Chili has so many different variations. I use whatever makes sense and what I have on hand. The essentials are onion, chili beans, and crushed tomatoes, it’s not chili if you don’t have these. Everything else is up to you. For this vegan chili recipe I used those items, canned corn, sweet peppers, garlic, green peppers, carrots, of course Beyond Meat, bay leaves and seasonings. The seasonings are Himalayan salt, black pepper, onion powder, cayenne pepper, oregano and chili powder. I went a little heavy on the seasoning of the Beyond Meat because it smooths out once you start simmering.

Process and key tips of making vegan chili recipe

This is a one pot vegan chili recipe, not need for multiple dishes. I used a cast iron pot, it is great for flavors combining and slow cooking without the slow cooker. The first step is to dice all of your fresh vegetables and mince the garlic. Once that is done you want to brown the garlic and onions first in olive oil. Then add your peppers and carrots. When they are softened (about 5-7 min of cooking) take them out, put in a bowl then add your Beyond Meat Beyond Beef to the pot. Cook the ground meat according to package and add your seasonings. Just about one minute before it is done add your vegetables back in and canned ingredients. Mix them all up add 1-2 bay leaves and let simmer for 1-3 hours. I did about an hour and a half because we were so hungry but next time I will do two hours. Make sure you take out the bay leaves before serving.

Ingredients
  

  • 1 pack Beyond Meat Beyond Beef plant-based ground meat
  • 1 can crushed tomatoes
  • 1 can chili beans
  • 1 can sweet corn
  • 1 tbsp minced garlic
  • 1-2 tbsp diced onions
  • tbsp diced carrots
  • tbsp diced sweet peppers
  • tbsp diced green peppers
  • 1 tsp chili powder
  • ¼ tsp onion powder
  • ½ tsp cayenne pepper
  • ½ tsp oregano
  • tsp Himalayan salt or to your liking
  • 1 tsp Ground black peppercorn or to your liking
  • 1 tbsp olive oil
  • 1-2 bay leaves

Instructions
 

  • Add olive oil to the pot and saute garlic for 1-2 minutes
  • Add onions and brown both for 1-2 minutes, until aromas
  • Add remaining cut veggies (carrots and peppers) and saute until softened 5-7 minutes
  • Once softened take veggies out of the pot and set aside.
  • Add Beyond Meat Beyond Beef ground meat and seasonings, cook according to package
  • 1 minute before Meat is done add the veggies back in and canned ingredients
  • Mix well and taste, add more seasoning if necessary
  • Add in your bay leaves
  • Let simmer for 30 min to 3 hours
  • Enjoy add toppings if you like or serve over rice or with crackers
