Easy Vegan Chili Made with Beyond Meat

Vegan Chili recipe using one pot and simple ingredients

Ingredients
  

  • 1 pack Beyond Meat Beyond Beef plant-based ground meat
  • 1 can crushed tomatoes
  • 1 can chili beans
  • 1 can sweet corn
  • 1 tbsp minced garlic
  • 1-2 tbsp diced onions
  • tbsp diced carrots
  • tbsp diced sweet peppers
  • tbsp diced green peppers
  • 1 tsp chili powder
  • ¼ tsp onion powder
  • ½ tsp cayenne pepper
  • ½ tsp oregano
  • tsp Himalayan salt or to your liking
  • 1 tsp Ground black peppercorn or to your liking
  • 1 tbsp olive oil
  • 1-2 bay leaves

Equipment

  • Large pot

Method
 

  1. Add olive oil to the pot and saute garlic for 1-2 minutes
  2. Add onions and brown both for 1-2 minutes, until aromas
  3. Add remaining cut veggies (carrots and peppers) and saute until softened 5-7 minutes
  4. Once softened take veggies out of the pot and set aside.
  5. Add Beyond Meat Beyond Beef ground meat and seasonings, cook according to package
  6. 1 minute before Meat is done add the veggies back in and canned ingredients
  7. Mix well and taste, add more seasoning if necessary
  8. Add in your bay leaves
  9. Let simmer for 30 min to 3 hours
  10. Enjoy add toppings if you like or serve over rice or with crackers
