I love slow cooker meals, they make my life so much easier on busy days. One of my favorite recipes to cook in the fall is turkey chili. In the slow cooker it taste best, because all the ingredients can blend and the flavors have more time to flourish. Another great thing about chili, is it can be made with whatever mix-ins you like.
Ingredients for Turkey Chili
For this easy recipe I chose ingredients that I know my kids would eat too. Our turkey chili included; pinto beans, carrots, onion, corn, zucchini, sweet peppers, diced tomatoes, garlic and seasonings. Other times I have thrown in sweet potato as well. As a side, I made mac and cheese for the kids and brown rice for us.
Process of Making Turkey Chili
The process was overall pretty easy. I diced the carrots, zucchini and sweet peppers and sauteed them for a few minutes, then placed them in the slow cooker. Next I sauteed the onion and minced garlic for 2-3 minutes before adding in the ground turkey. Seasoning the turkey is key to making your chili flavorful, I used Trader Joe’s Everyday Seasoning, kosher salt, and chili seasoning. Once cooked I added it to the slow cooker, along with the beans, canned corn and diced tomatoes. I mixed it up, added a bit more seasoning and turned the turkey chili on low for about 5 hours.

This batch was ate within two days, unfortunately there were no leftovers. Usually I’ll make a little extra so I can freeze it and have it for a day when no one wants to cook. Try it out or tell me your different ways that you make it, also try the vegan chili recipe.
