My favorite recipes are the ones with little effort, tasty and does most of the cooking in the oven. This simple sheet pan recipe of roasted sausage and veggies is a perfect weeknight dinner. What is easier in a recipe than frozen vegetables? I say nothing at all. This sheet pan recipe of roasted sausage and veggies uses just that. The ingredients include frozen 3 pepper and onion blend, frozen California blend vegetables, fresh zucchini, gold potatoes and your choice of sausage. I prefer Hillshire Farm turkey sausage and for seasonings I use oregano, salt, pepper, cayenne pepper and garlic powder. If I weren’t making this for the whole family I would add more spicier seasoning. But as always make the recipe to your taste.
How to make
The prep and process of making this sheet pan recipe of sausage and roasted veggies takes about 40 minutes in total. After preheating the oven the only prep you have to do is slice the sausage, zucchini and potatoes and season everything. That’s it. Once that is done put it on the pan mix it up and toss it in the oven. About halfway through you want to toss or flip everything for an even cook. After that you can enjoy and maybe pair with a salad or rolls if you want a side.

Sheet pan roasted sausage and veggies
Equipment
- 1 Sheet pan
Ingredients
- 13 oz Turkey sausage or sausage of your choice
- 1 bag Frozen 3 pepper and onions
- 1 bag Frozen California vegetables
- 1 Fresh zucchini
- 1½ tbsp Olive oil
- 1 lb Gold potatoes
- 1½ tsp Salt
- 1 tsp Pepper
- 1½ tsp Oregano
- 1 tsp Red cayenne pepper
- ¾ tsp Garlic powder
Instructions
- Preheat oven to 400°
- Slice sausage to ½ inch thick slices
- Slice zucchini
- Quarter gold potatoes
- Place vegetables and sausage in a bowl and season to your liking
- Place all vegetables with olive oil on sheet pan, mix up and place in oven
- After 15 minutes of baking, toss ingredients and place back in oven
- Bake for 15-20 minutes longer
- Enjoy!
