Happy Mardi Gras! I like to do something to celebrate fun holidays like this one and since I am not in New Orleans or Mississippi I shall cook. I love a good Cajun dish like shrimp etouffee, or a good po’ boy and I really like jambalaya. Honestly after years of cooking, I am not that great at making rice so this is a little twist on the classic dish. The jambalaya pasta ingredients include the mains; chicken, shrimp, andouille sausage and mirepoix mix. This is not a simple an easy dish, it does take a lot of prep, but once you have cut and diced your ingredients the entire process takes less than an hour. With every recipe you can tailor it to how you like it. Most people use pork andouille sausage but, I do not eat pork so I used chicken andouille. It is a bit harder to find, but stores like Sprouts and Trader Joes usually have some on hand. Along with that meat, I used chicken breasts and shrimp. Not that much shrimp because my husband has a slight allergy. I was looking for the easy way out, but the grocery stores are spare, so the frozen mirepoix mix was not available. Fresh peppers, onions and celery were used instead, along with garlic and Tony Chachere’s Creole Seasoning. The pasta you use is up to you, I like rotini pasta because it holds the sauce better. Pantry ingredients needed are chicken broth, tomato paste, diced tomatoes, Worcestershire sauce, and olive oil. Heavy cream and butter are also key to the sauce as well.

  • Large pan or pot

Ingredients
  

  • 12 oz Rotini pasta Or pasta of your choice
  • 2 Skinless, boneless chicken breasts Seasoned
  • 1 cup Peeled, tail off shrimp Seasoned
  • 2 links Andouille Chicken Sausage Or pork
  • ½ Green bell pepper (diced)
  • ½ Red bell pepper (diced)
  • 2 Stalks of celery (diced)
  • 1 cup Yellow onion (diced)
  • 3 cloves Minced garlic
  • ¾ cup Chicken broth
  • 1⅓ tbsp Tomato paste
  • 1 cup Diced tomatoes
  • 2 tbsp Butter
  • 1 tbsp Olive oil Or a little more depending on meat
  • ¾ cup Heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tbsp Tony Chachere's seasoning
  • ½ tbsp Oregano
  • ½ tbsp Thyme

Instructions
 

  • Diced veggies and chicken breasts, slice sausage
  • Boil noodles accordingly, save ¼ cup of pasta water
  • Cook shrimp in 1 tbsp of butter for 2-3 min, set aside
  • Cook chicken breasts in olive oil 4-5 min, set aside
  • Add 1 tbsp of butter, Andouille sausage, onions, peppers and celery until veggies are soft and sausage is browned, 5-7 min
  • Mix in garlic and seasoning for 30 sec to 1 min
  • Add in Worcestershire sauce, diced tomatoes, tomato paste and chicken broth, simmer for 10 min
  • Add heavy cream and simmer for 8-10 min
  • Mix in pasta liquid, cooked shrimp, chicken and pasta
  • Taste for seasoning, top with green onions and parsley
  • Enjoy!
